Apple Fritter Cake

Since yesterday was the 4th of July I needed to come up with some kind of dessert to bring to a party. I love Apple Pie and it is such an American food tradition but I find it to be boring sometimes. So I looked at pinterest an found a recipe from Cookies and Cups for an Apple Fritter Cake recipe. It was slightly time-consuming recipe but holy moly cow was it delicious! Definitely worth the time investment.

First get all of your ingredients together. I like to pre-measure everything out first as I find this makes things flow a bit faster.

Start by chopping up 2 cups of apples. They can be green or red but I prefer green for this recipe.

Mix them together with the sugar, cinnamon, nutmeg, cornstarch and water.

Then heat over medium heat for 5-6 minutes until apples soften and a liquid thickens. Set aside to cool.

In another mixing bowl beat butter and sugar, about 3 minutes until fluffy. Add applesauce, vanilla and eggs and mix on medium until combined. In a separate bowl whisk together flour, baking powder, baking powder, salt and cinnamon. Add the dry mixture to the wet mixture while also adding the Sour Cream or Greek yogurt in alternating parts. Start with and end  with the dry.

Layer half of the batter in a 9×13 baking dish and spread apple mixture on top. This part takes a lot of patience. Then top with 2/3 of the brown sugar, sprinkling all over the apple mixture.Then pour the remaining batter on top.

Bake 35-40 minutes, or until the center of the cake is set. While your cake is baking whip up the glaze. After your cake is done baking immediately poke about 30 holes in the cake with a knife.

Then pour the glaze all over the cake. You can roll the dish around to get the glaze to cover the entire cake as it will still be runny for a little while. Let cake sit for 20 minutes to harden up and then serve with vanilla ice cream!

  • Filling
  • 2 cups chopped Granny Smith Apples (about 2 medium)
  • 1/3 cup granulated sugar
  • 1/2 tsp cinnamon
  • pinch of nutmeg
  • 2 Tbsp cornstarch
  • 2 tsp water
  • 1/2 cup dark brown sugar
  • 1/2 tsp cinnamon
  • Cake
  • 1/3 cup butter , room temperature
  • 3/4 cup sugar
  • 1/2 cup applesauce
  • 1 tsp vanilla
  • 2 eggs
  • 2 1/4 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 cup greek yogurt or sour cream
  • Glaze
  • 2 cups powdered sugar
  • 1/3 cup milk
  • 1 tsp vanilla

Instructions

  1. In a medium saucepan combine apples, granulated sugar, cinnamon, nutmeg, cornstarch and water. Heat over medium heat for5-6 minutes until apples soften and a liquid thickens. Set aside to cool.
  2. Mix dark brown sugar and cinnamon in a small bowl and set aside.
  3. Cake
  4. Preheat oven to 350°
  5. Spray a 9x13 pan with baking spray.
  6. In your mixing bowl beat butter and sugar, about 3 minutes until fluffy. Add applesauce, vanilla and eggs and mix on medium until combined.
  7. In a separate bowl whisk together flour, baking powder, baking powder, salt and cinnamon.
  8. Add the dry mixture and the Greek yogurt in alternating parts, starting and ending with the dry.
  9. Mix until just combined.
  10. Spread 1/2 the cake batter in the bottom of the prepared pan. Top with the apple mixture, spreading carefully to cover the batter. Then top with 2/3 of the brown sugar, sprinkling all over the apple mixture.
  11. Cover with the remaining batter and sprinkle the remaining 1/3 of the brown sugar all over the top.
  12. Bake 35-40 minutes, or until the center of the cake is set.
  13. Glaze
  14. While the cake is baking prepare the glaze by mixing the powdered sugar, milk and vanilla in a medium bowl.
  15. When cake is done, immediately poke holes in the cake using a butter knife, about 30 pokes.
  16. Pour the glaze over the top of the cake spreading to cover it completely.
  17. Let the glaze set up for about 20 minutes before serving.
